Capocollo is a typical matured coldcut from Tuscany, obrained by salting part of the pork located between head and shoulder. Spicies are added and and the meat massaged to let them been assorbed uniformly. Have a dark red appearance with thick white fat venis and this particular structure of fat with layers of red meat, give capocollo tenderness and flavor.
