TUNA CARPACCIO SUBLIME CREAM WITH PARMESAN

TO MAKE THIS DISH

Ingredient list

Carpaccio

800 g finely sliced tuna
50 g grated parmesan
packet borage flowers
8 pieces caper berries
sprigs dill
sprigs fresh coriander
zestes de citron confit

Sublime with Parmesan

400 g Sublime, Cream with Mascarpone
50 g parmesan powder
salt
ground black pepper

Dressage

40 g olive oil
fleur de sel
ground black pepper

THE RECIPE, STEP BY STEP

1. Carpaccio

Plate the tuna, then all the condiments.

 

2. Sublime with Parmesan

Combine all the ingredients and whip in a mixer at medium speed.

 

3. Dressage

Pipe the Sublime with Parmesan using a plain nozzle. Season with fine “fleur de sel” sea salt, freshly ground pepper and olive oil.
